MY FAVORITE CHRISTMAS COOKIE RECIPE | PECAN SNOWBALLS

The rich, buttery cookies are simply delicious. It's impossible to eat just one!

Ingredients
  • 4 Sticks (2 Cups) Softened Butter, Cut Into Cubes
  • 1 Cup Confectioners' (Powdered) Sugar
  • 2 Teaspoons Vanilla Extract
  • 4-1/2 Cups All Purpose Flour
  • ½ Teaspoon Salt
  • 1-1/2 Cups Diced Pecans
Instructions
  1. Preheat oven to 400 degrees F.
  2. Add butter, confectioners' (powdered) sugar and vanilla extract to the bowl of your standing mixer.
  3. On low speed, thoroughly cream the butter and sugar mixture.
  4. Sift together flour and salt, then add cup at a time to the creamed butter mixture, beating on low speed until the flour is incorporated.
  5. Add pecans to the cookie dough and mix to combine
  6. Using a 1-1/2" scoop, scoop uniform amounts of dough onto a lined cookie sheet.
  7. Using your hands, form the dough into balls.
  8. Bake cookies for 10 to 12 minutes in your preheated oven until they are set and just beginning to brown.
  9. Place a generous amount of confectioner' sugar in a low-sided bowl.
  10. While cookies are warm, roll them in the sugar.
  11. Let cookies cool and roll them in the sugar again for a nice generous coating.
  12. ENJOY!
