SPANISH STYLE KALE SOUP WITH CHORIZO
 
 
This wonderful soup is quick to make, filling and nutritious. Serve it with a salad and some good crusty bread and you have a hearty meal on a cold winter's night.

Ingredients
  • 1 Medium Onion, Diced
  • 3 Medium Carrots, Diced
  • ¼ Cup Extra Virgin Olive Oil
  • 5 Large Cloves Garlic, Minced
  • ⅛ Teaspoon Crushed Red Pepper Flakes
  • Kosher Salt and Freshly Ground Black Pepper to Taste
  • 8 Oz. Chorizo Sausage, Thinly Sliced
  • 8 Cups Chicken Broth
  • 2 -15 Oz. Cans Cannellini or White Kidney Beans, Drained and Rinsed
  • 1 Lb. Tuscan Kale, Stemmed and Rough Chopped
  • 1 Pkg. Sazón Seasoning Mix Con Azafran, by Goya
  • 1 Tablespoon Pimenton Dulce (Spanish Paprika)
Instructions
  1. Heat the olive oil in a large stock pot, then add the diced onion and carrots.
  2. Saute the vegetables until they begin to soften, the onions become translucent and the carrots tender.
  3. Add the garlic and crushed red pepper flakes to the onions and carrots.
  4. Add kosher salt and freshly ground black pepper to taste.
  5. Continue to saute over moderate heat for about 3 more minutes, being careful not to brown the garlic, as that makes it bitter tasting.
  6. Add the chorizo sausage and saute, stirring, until the sausage is heated through and releases some of its flavorful juices.
  7. Add the chicken broth and one can of beans.
  8. Using a potato masher, mash the beans.
  9. Add the second can of beans, leaving them whole.
  10. Bring the soup to a boil, then reduce heat to a simmer.
  11. Add the kale to the hot, simmering soup.
  12. Add package of Sazón Seasoning and Pimenton Dulce plus additional salt and pepper to taste.
  13. Allow the soup to simmer until the kale is tender.
  14. Serve hot.

Notes
Spanish style hard chorizo sausage is the star here and makes this soup extra delicious. Buy it at a Latin store that carries food from Spain, online at La Tienda or at World Market.
