BROWN SUGAR OATMEAL CAKE

Ingredients
  • 1-1/2 Cups Boiling Water
  • 1 cup Old Fashioned Oatmeal (not the quick cooking type)
  • 1-1/3 Cups White Whole Wheat Flour
  • 1 Teaspoon Cinnamon
  • 1 Teaspoon Baking Soda
  • ½ Teaspoon Salt
  • ½ Cup Butter, Cut Into Small Cubes
  • 1 Cup Brown Sugar, Packed
  • 1 Cup Granulated Sugar
  • 2 Eggs
Instructions
  1. Preheat oven to 350ยบ F.
  2. Prepare a 9" x 9" baking pan.
  3. Pour the boiling water over the oats.
  4. Allow the oats to soften in the hot water while you prepare the dry ingredients.
  5. In a small mixing bowl combine the flour, cinnamon, baking soda and salt.
  6. To your standing mixer add the butter, brown sugar and granulated sugar.
  7. Beat until light and fluffy.
  8. Add eggs and beat to combine.
  9. Add the softened oats along with all the liquid and mix on low to combine.
  10. Returning to the dry ingredients that you set aside earlier, add them to the wet ingredients and on low speed, mix to combine.
  11. Pour the batter into prepared baking dish.
  12. Place in preheated oven and bake for approximately 35 minutes until a toothpick inserted into the center of the cake comes out clean.
  13. Cool in the pan on a cooling rack.
  14. Serve warm or at room temperature.
Notes
This moist and delicious cake is packed full of healthy fiber. It makes a great coffee cake or serve it as an afternoon snack with tea.
