SUPER MOIST & DELICIOUS "BANANA BREAD"
 
 
I have prepared many Banana Bread recipes but none is more moist and delicious than the one I present here. It is a large recipe and makes up to 3 medium size loaves, 2 large loaves or 6 miniature loaves, making it perfect for gifting! ENJOY!

Ingredients
  • 4 Eggs, Beaten
  • 1 Cup Vegetable Oil (Corn or Canola Oil)
  • ⅔ Cup Water
  • 1 tsp. White Vinegar
  • 1 tsp. Vanilla
  • 2 Cups Mashed Ripe Bananas (approx. 5)
  • 2 ½ Cups Granulated Sugar
  • 2 Cups White Whole-Wheat Flour
  • 1 ½ Cups All Purpose White Flour
  • 2 tsp. Salt
  • 2 tsp. Baking Soda
  • 2 Cups Walnuts
Instructions
  1. Preheat oven to 350 F
  2. Add 4 eggs to a standing mixer and beat using a "beater" attachment.
  3. Add oil, water, vinegar and vanilla to eggs.
  4. Use a fork to mash bananas then add to other wet ingredients.
  5. Add 2 ½ Cups Granulated Sugar.
  6. Mix until ingredients are incorporated.
  7. Change beater attachment to "paddle" attachment.
  8. Sift together the white whole-wheat flour, all-purpose flour, salt and baking soda.
  9. Add sifted dry ingredients to wet ingredients and mix on low speed until incorporated.
  10. Grease 2 large, 3 regular size loaf pans or 6 mini loaf pans.
  11. Pour batter into prepared loaf pans.
  12. Bake for 1 to 1 ¼ hours or until toothpick inserted in center comes out clean. If using miniature loaf pans they will require less baking time.
  13. Let loaves rest for 5 minutes in their loaf pans on a cooling rack.
  14. Using a knife or spatula loosen loaves from sides of pan.
  15. Invert loaves onto cooling rack and cool completely before slicing.
Notes
Banana bread freezes well and can be enjoyed for several months when frozen.
