SPANISH STYLE CHICKEN FRICASSEE

This delicious recipe is Spanish comfort food at its finest. The tender, fall-off-the bone chicken is made extra special by the addition of green olives and Sazón Goya, a saffron flavoring.

Ingredients
  • 4 Chicken Thighs & 4 Drumsticks
  • Kosher Salt
  • Freshly Ground Coarse Black Pepper
  • ⅓ Cup Extra Virgin Olive Oil
  • 2 Medium Sized Green Bell Peppers, Thinly Sliced
  • 1 Brown Onion, Thinly Sliced
  • 3 Cloves Fresh Garlic, Minced (about 1 T.)
  • 2 Fresh Tomatoes, Diced
  • 1-28 oz. Can Crushed Tomatoes
  • 1 cup Pitted Green Olives with Pimentos, Drained
  • 2 Packets Sazón Azafran Seasoning by Goya
  • Chopped Parsley for Garnish
Instructions
  1. Preheat oven to 350 degrees F.
  2. Sprinkle the chicken with a generous amount of kosher salt and freshly ground coarse black pepper.
  3. Add olive oil to a large dutch oven and heat on stovetop on medium.
  4. Place chicken in the hot oil. It should be sizzling hot.
  5. Quickly sear the meat until the chicken is golden brown on the outside but not cooked through on the inside. This takes about 10 minutes.
  6. Don't over crowd the chicken. Fry it in batches if necessary, turning it occasionally.
  7. Remove the chicken from the pan and set it aside.
  8. Add the bell peppers, onions, tomatoes and garlic to the dutch oven.
  9. Saute vegetables over medium heat, stirring occasionally, until they are tender.
  10. Remove the dutch oven from the heat and place chicken over the vegetables.
  11. Add the olives and crushed tomatoes to the chicken and vegetables.
  12. Add 2 packets of Sazón.Using a large spoon, mix the ingredients to distribute the contents of the pot and mix in the Sazón.
  13. Cover dutch oven and place it in the oven, preheated to 350°F. Cook for 1 hour.
  14. Serve over a bed of long grain rice. I use Uncle Ben's Original Converted Long Grain Rice.
  15. Garnish with fresh parsley.
  16. Enjoy.
Notes
Feel free to substitute 1 whole cut up chicken in place of simply legs and thighs.
