FILLOAS - SPANISH STYLE CREPES
 
 
From the northern western region of Spain, called Galicia, these Spanish style crepes are delicious plain as a snack or can be used with a sweet or savory filling.

Ingredients
  • 6 Large Eggs, Beaten
  • 3 Cups Water
  • 2 Cups All Purpose Flour
  • ½ Teaspoon Salt
  • Butter
Instructions
  1. In a large mixing bowl whisk the eggs.
  2. Add 3 cups water.
  3. Gradually whisk 2 cups flour.
  4. Mix in salt.
  5. Set aside to rest for 10 minutes.
  6. Melt a small amount of butter in a skillet over medium heat.
  7. Using a paper towel, wipe out the excess butter.
  8. Pour about ¼ cup of batter into the hot skillet.
  9. Swirl the batter around to coat the entire bottom surface of the pan.
  10. Cook for about 30 seconds.
  11. When the edges begin to curl and separate from the pan, the crepe is ready to be turned.
  12. Using a spatula or your hands, flip the filloa over and cook for a few seconds further.
  13. Slide out of the pan and stack on a plate.
Notes
Filloas are so versatile! They can be served as a snack or eaten for breakfast. Add your favorite savory filling and they become a main dish. Add your favorite sweet filling and they become a delicious dessert.
