MEXICAN STYLE CRUSTLESS QUICHE

This easy to prepare, make-ahead quiche recipe is delicious. Make it the night before and pop it in the oven 45 minutes before you plan to serve a special breakfast or brunch.

Ingredients
  • 1 Large Red Bell Pepper, Diced
  • 4 Green Onions (Scallions) Diced
  • 12 Large Eggs
  • ¼ Cup All Purpose Flour
  • ¼ Teaspoon Baking Powder
  • 1 Teaspoon Salt
  • ½ Teaspoon Ground Black Pepper
  • 1 Pint (16 oz.) Cottage Cheese
  • 1 Lb. Mexican Style Cheese Blend
Instructions
  1. Preheat oven to 350 degrees.
  2. Prepare a 9" x 13" baking dish with cooking spray.
  3. In a large mixing bowl, beat eggs.
  4. Add the flour, baking powder, salt & pepper to the beaten eggs and mix until flour is incorporated.
  5. Add in the red bell peppers and the green onions and mix to incorporate.
  6. Add in the cottage cheese and the shredded Mexican style cheese blend.
  7. Pour into a prepared baking dish.
  8. Lightly sprinkle with ground paprika.
  9. Bake for 35 to 45 minutes until set and lightly golden brown.
