ITALIAN STYLE CRUSTLESS QUICHE RECIPE

This easy to prepare, make-ahead quiche recipe is delicious. Make it the night before and pop it in the oven 45 minutes before you plan to serve a special breakfast or brunch.

Ingredients
  • 12 Large Eggs
  • ¼ Cup All Purpose Flour
  • ¼ Teaspoon Baking Powder
  • 1 Teaspoon Salt
  • ½ Teaspoon Ground Black Pepper
  • 1 Pint (16 oz.) Cottage Cheese
  • 1 Lb. Shredded/Grated Mozzarella Cheese
  • 1 Cup Basil Pesto Sauce
Instructions
  1. Preheat oven to 350 degrees.
  2. Prepare a 9" x 13" baking dish with cooking spray.
  3. In a large mixing bowl, beat eggs.
  4. Add the flour, baking powder, salt & pepper to the beaten eggs and mix until flour is incorporated.
  5. Add the cottage cheese and the shredded Mozzarella cheese and stir to combine.
  6. Pour into a prepared baking dish.
  7. Dollop 12 heaping tablespoons, spaced in even intervals across the top of the quiche mixture.
  8. Using a knife, cut through the quiche in a swirling "S" motion, loosely distributing the Pesto sauce.
  9. Bake for 35 to 45 minutes until set and lightly golden brown.
  10. Cut in squares and serve hot out of the oven.
