CUCUMBER-MINT YOGURT SAUCE

This delicious and refreshing sauce is the icing on the cake, so-to-speak, as it is enjoyed as an accompaniment to the Persian dish known as Chelo Kebab.

Ingredients
  • ¼ Cup Fresh Mint, Finely Minced
  • 1-1/2 Cups English Cucumber, Peeled, Seeded and Diced
  • 2 Cups Plain Yogurt
  • 2 Cloves Minced Garlic
  • Kosher Salt & Coarse Ground Pepper to Taste
Instructions
  1. Trim one end off of an English cucumber and cut it in half.
  2. You will only need approximately half of an English cucumber for this recipe.
  3. Peel the cucumber and cut it in half lengthwise.
  4. Using a melon baller or small spoon, scrape out and discard the seeds.
  5. Cut the cucumber lengthwise into thin strips, then dice.
  6. Transfer the cucumber into a small mixing bowl.
  7. Add yogurt, mint, garlic and salt and pepper to taste.
  8. Place in an airtight container and store in the refrigerator until ready for use.
Notes
This sauce may be made in advance and refrigerated in an airtight container for up to one week.
