HERBED SCALLOPED POTATOES

I developed this recipe after enjoying similar potatoes in the restaurant located in the Parador de Leon, in Spain. Double the recipe if feeding a crowd. These potatoes take 1.5 hours to bake so allow plenty of time for cooking.

Ingredients
  • 3 Cups Half & Half
  • 3 Sprigs Fresh Thyme
  • ¼ Cup Diced Shallots
  • 1-1/2 Teaspoon Kosher Salt
  • 2 Pounds Yukon Gold Potatoes, Peeled & Sliced Very Thinly
  • 6 Ounces Gruyere Cheese, Finely Grated
  • Freshly Ground Pepper
  • 6 Tablespoons Butter, Cubed
  • 1 Teaspoon Minced Fresh Thyme
Instructions
  1. Preheat oven to 400 degrees.
  2. Add half & half to a small saucepan with the fresh thyme sprigs, diced shallots and Kosher salt.
  3. Simmer for 10 minutes over low heat.
  4. Generously grease an 11" x 8" baking dish with butter.
  5. Arrange ⅓ of the sliced potatoes in the bottom of the baking dish, layering them in columns.
  6. Remove the sprigs of thyme from the half & half.
  7. Pour ⅓ of the half & half mixture over the potatoes.
  8. Sprinkle with ⅓ of the cheese.
  9. Sprinkle with freshly ground pepper.
  10. Repeat this process 2 more times, ending up with a total of 3 layers of potatoes & cheese.
  11. Sprinkle the top layer with 1 teaspoon diced thyme.
  12. Bake for approximately 1 hour or until potatoes are tender and top is golden brown.
  13. Check the potatoes periodically as they cook.
  14. If the potatoes are browned before they're tender, cover loosely with foil and continue cooking.
  15. When done remove from the oven and allow the potatoes to rest for 10 minutes before serving.

Notes
Enjoy these potatoes year round; however, no Easter dinner is complete without these Herbed Scalloped Potatoes.
