LIMA BEAN DIP WITH GARLIC AND FETA CHEESE

This dip is a delicious and healthy appetizer for a Spring dinner party. Enjoy it with a crudite of sliced raw vegetables and crispy crackers.

Ingredients
  • 1 Lb. Frozen Lima Beans
  • 4 Cloves Garlic, Minced
  • 1 Teaspoon Lemon Zest
  • 2 Tablespoons Fresh Lemon Juice
  • ¼ Cup Extra Virgin Olive Oil
  • 2 Tablespoons (or more) Reserved Cooking Liquid from Lima Beans
  • ⅓ Cup Crumbled Feta Cheese
  • Kosher Salt & Freshly Ground Pepper to Taste
Instructions
  1. Boil frozen lima beans in salted water according to package directions until tender.
  2. Drain the beans, reserving ½ cup of the cooking liquid.
  3. Mince 4 cloves of garlic.
  4. Zest a lemon to produce 1 teaspoon of lemon zest.
  5. Squeeze the lemon to produce 2 tablespoons of fresh lemon juice.
  6. Place cooked lima beans in a small food processor and add the garlic, lemon zest, lemon juice, extra virgin olive oil & 2 tablespoons reserved cooking liquid.
  7. Process the beans for a few pulses.
  8. Using a rubber spatula, scrape down the sides of the food processor.
  9. Add additional reserved cooking liquid to achieve desired consistency.
  10. Process again until all of the beans are pureed.
  11. Add freshly ground pepper and Kosher salt to taste.
  12. Quickly process to blend in salt & pepper.
  13. Transfer into a small mixing bowl.
  14. Fold in feta cheese and transfer to a serving bowl.
  15. Serve with raw vegetables such as jicama, carrot sticks & cucumber slices for dipping .
  16. This dip also tastes great on crackers.
