MY FAVORITE CHRISTMAS COOKIE RECIPE | PECAN SNOWBALLS

Serves: 3 doz
- 4 Sticks (2 Cups) Softened Butter, Cut Into Cubes
- 1 Cup Confectioners' (Powdered) Sugar
- 2 Teaspoons Vanilla Extract
- 4-1/2 Cups All Purpose Flour
- ½ Teaspoon Salt
- 1-1/2 Cups Diced Pecans
- Preheat oven to 400 degrees F.
- Add butter, confectioners' (powdered) sugar and vanilla extract to the bowl of your standing mixer.
- On low speed, thoroughly cream the butter and sugar mixture.
- Sift together flour and salt, then add cup at a time to the creamed butter mixture, beating on low speed until the flour is incorporated.
- Add pecans to the cookie dough and mix to combine
- Using a 1-1/2" scoop, scoop uniform amounts of dough onto a lined cookie sheet.
- Using your hands, form the dough into balls.
- Bake cookies for 10 to 12 minutes in your preheated oven until they are set and just beginning to brown.
- Place a generous amount of confectioner' sugar in a low-sided bowl.
- While cookies are warm, roll them in the sugar.
- Let cookies cool and roll them in the sugar again for a nice generous coating.
- ENJOY!
