BROWN SUGAR OATMEAL CAKE

- 1-1/2 Cups Boiling Water
- 1 cup Old Fashioned Oatmeal (not the quick cooking type)
- 1-1/3 Cups White Whole Wheat Flour
- 1 Teaspoon Cinnamon
- 1 Teaspoon Baking Soda
- ½ Teaspoon Salt
- ½ Cup Butter, Cut Into Small Cubes
- 1 Cup Brown Sugar, Packed
- 1 Cup Granulated Sugar
- 2 Eggs
- Preheat oven to 350º F.
- Prepare a 9" x 9" baking pan.
- Pour the boiling water over the oats.
- Allow the oats to soften in the hot water while you prepare the dry ingredients.
- In a small mixing bowl combine the flour, cinnamon, baking soda and salt.
- To your standing mixer add the butter, brown sugar and granulated sugar.
- Beat until light and fluffy.
- Add eggs and beat to combine.
- Add the softened oats along with all the liquid and mix on low to combine.
- Returning to the dry ingredients that you set aside earlier, add them to the wet ingredients and on low speed, mix to combine.
- Pour the batter into prepared baking dish.
- Place in preheated oven and bake for approximately 35 minutes until a toothpick inserted into the center of the cake comes out clean.
- Cool in the pan on a cooling rack.
- Serve warm or at room temperature.
This moist and delicious cake is packed full of healthy fiber. It makes a great coffee cake or serve it as an afternoon snack with tea.
