SUPER MOIST BANANA POPPY SEED CAKE

This cake is really moist and really, really delicious! Adapted from a ButterYum.com recipe called To Die For Banana Cake. It is to die for!

Ingredients
  • CAKE
  • 2 Eggs
  • 1 Cup Sour Cream
  • ¼ Cup Melted Butter
  • 1-1/3 Cup Granulated Sugar
  • 2 Teaspoons Vanilla Extract
  • 4 Very Ripe Bananas, Mashed
  • 2 Cups White Whole Wheat Flour
  • ½ Teaspoon Salt
  • 1 Teaspoon Baking Soda
  • 1 Tablespoon Poppy Seeds
  • FROSTING
  • 1 Cube (1/2 Cup) Butter, Softened
  • ⅓ Cup Heavy Whipping Cream
  • 2 Teaspoons Almond Extract
  • 4-1/2 Cups Powdered Sugar
  • 1 Tablespoon Poppy Seeds
Instructions
  1. CAKE
  2. Preheat oven to 375 degrees.
  3. Prepare two 9 inch round cake pans with parchment and cooking spray.
  4. Beat eggs. Add sour cream and melted butter. Beat to combine.
  5. Gradually add sugar to the egg mixture, beating until well incorporated.
  6. Add the mashed bananas & vanilla to the sugar & egg mixture and mix to combine.
  7. Sift flour, salt and baking soda together.
  8. Gradually add dry ingredients to wet ingredients and mix until combined.
  9. Do not over mix.
  10. Add poppy seeds and give it one more mix to combine.
  11. Pour into prepared cake pans and bake for approximately 40 minutes until cake tester comes out clean.
  12. Invert onto a cooling rack, remove parchment and allow to cool completely before frosting.
  13. FROSTING
  14. Place softened and cubed butter into the bowl of a stand mixer.
  15. Gradually add powdered sugar, beating after each addition until smooth.
  16. Beat in whipping cream.
  17. Add almond extract and poppy seeds and mix to combine.
  18. Frost thoroughly cooled cake.
  19. ENJOY!
