Ingredients
  • 1 Dozen Hard Boiled Eggs, Chopped
  • 5 Lbs Red Potatoes, Washed and Cut Into ½ Cubes
  • 1 Red Onion, Finely Diced
  • 5 Celery Stalks (including several tender inner stalks and leaves), diced
  • 1 Bunch Flat Leaf Italian Parsley, Minced
  • 3 Heaping Tablespoons Grey Poupon Country Dijon Mustard
  • 2-1/2 Cups Real Mayonnaise
  • 1 Teaspoon Kosher Salt
  • 1 Teaspoon Coarse Ground Pepper
  • Paprika and Parsley Leaf For Garnish
Instructions
  1. Place cubed potatoes in a large pot, cover with water and add 1 teaspoon salt.
  2. Boil the potatoes until fork tender. Drain and cool.
  3. Add all of the ingredients to a large bowl.
  4. Mix to combine.
  5. Taste and adjust salt and pepper to your liking.
  6. Garnish with paprika and a sprig of parsley.
  7. Refrigerate covered until ready to serve.
