S’MORES POPS

Happy National S’mores Day!

Did you know that the S’mores recipe first appeared in a 1927 edition of the Girl Scout Handbook called Tramping and Trailing with the Girl Scouts?

Well, despite the fact that I was a Campfire Girl and never a Girl Scout, I grew up loving them.  To me S’mores are nostalgic.  They bring back sentimental memories of camping with my family, going to summer camp with friends, bonfires, and all things summer.  So, in honor of National S’mores Day, I thought I’d show you a simple recipe for S’mores Pops.

S’mores Pops are easy and quick to make and are a good imitation of a S’more when there’s no campfire in sight.  It uses the same ingredients as regular S’mores: chocolate, graham crackers and marshmallows…

but the preparation method is different.  The chocolate gets melted in the microwave, the graham crackers get crushed and the marshmallows get dipped.

The first thing you’ll do is crush a couple of packages of Graham Crackers.

Do this by putting the crackers in a ziploc bag (remove all the air from the bag before sealing it) and then either crush them by hand or with a rolling pin.  Once they are finely crushed, pour them into a small bowl.

Next you’ll need an 11.5 oz. bag of chocolate chips. I prefer milk chocolate, so I use milk chocolate chips.  You can use any flavor chocolate chip you prefer.  You could even get creative and use butterscotch, peanut butter, white chocolate or a combination of several types of chocolate.

Just pour them into a microwave-proof bowl…

and quickly melt the chips in the microwave for 30 seconds. Give the chips a stir and zap them for another 15 to 30 seconds.  The timing will depend on the power of your particular microwave, but be very careful not to overheat your chips. The chips will retain their shape and must be stirred until they achieve a smooth consistency.

Insert a wooden skewer or lollipop stick into a marshmallow and dip it into the melted chocolate, swirling it around to coat about 2/3rds of the marshmallow.

Then, dip the chocolate coated marshmallow into the crushed graham crackers, coating about 1/3 of the marshmallow with cracker crumbs.

Place the coated marshmallows on a cookie sheet that has been sprayed with cooking spray.  If you wish to serve them as pops, leave the sticks in. Then place them in the refrigerator to chill and harden the chocolate.

I served them with the sticks in at a concert at The Hollywood Bowl.  It makes a great picnic dessert.

Otherwise, remove the sticks and serve them as a finger dessert.

Once the chocolate has hardened, you may serve them to your guests who are guaranteed to love them.
