SOUR CREAM PANCAKES
Happy Weekend!
I am the mother of 5 children and all but one of them have flown the nest. I have a little over a year until I will have an empty nest. In the meantime, however, my youngest chickadee, Austin, frequently feathers my nest with various and sundry other children that are often waiting for mama bird to feed them. Sleepovers, after long days of skiing, lead to hungry mouths in the a.m. But Austin and his buds know just where they can find a hearty breakfast on a Sunday morning.
One of their favorites is my Sour Cream Pancakes.
I’m planning on making them for breakfast, so I thought I’d share with you my delicious recipe. To make perfect pancakes it is real handy if you happen to have a griddle on your stovetop.
If not, the second best thing is to heat up a griddle pan. The third best thing is to use a large frying pan. In any case, you want to start heating it up. In my case, I have found that if I set the griddle temperature to 350º F I can achieve perfection in the pancake department. So, now that you have started to preheat your griddle, you may get started on the pancake batter.
Into a medium size bowl add 1-1/4 cups all-purpose flour. To that add 1/4 cup granulated sugar, 1 teaspoon baking soda and 1/2 teaspoon of salt.
Using a whisk, give it a thorough mixing to incorporate all of the dry ingredients.
Break 2 large eggs into a separate bowl and whisk them up.
Add 1 teaspoon of vanilla extract to the beaten eggs…..
and 1 cup of milk.
Lastly, add 1 cup of sour cream…
and mix it all up.
Now, pour the liquid ingredients into the bowl containing the dry ingredients……
and mix it until the batter is smooth.
At this point I get out my large, 1 quart Pyrex measuring cup and fill it with the pancake batter.
I use the measuring cup in order to make it easy to pour the batter onto the hot griddle. Some folks like to use a ladle to do this but I think that method gets to0 drippy and messy. Now, before you go pouring the batter, make sure to grease the griddle slightly with a very small amount of butter. My griddle is nicely seasoned from years of use and does not require more than a slight amount of butter. Too much butter will make your pancakes greasy, so easy does it. Also, add the butter just before pouring on the batter so as not to burn it.
As you can see, the pancakes are forming bubbles. Once the bubbles begin to pop is when they are ready to be flipped.
Get out your trusty metal spatula and flip those golden brown pancakes right on over.
They will only require a minute or two more to brown the flip side. At this point, I transfer the sour cream pancakes to a plate and pop them in my warming drawer. If you don’t have a warming drawer you may wish to pop them in a slightly warm oven as you continue to cook more pancakes.
Once my plate is full and the batter exhausted it is time to serve breakfast.
Sometimes I serve my sour cream pancakes with diced up mango……
and other times I serve them with strawberries and bananas.
But I never fail to serve them up with melted butter and warm syrup. They are delicious!

- 1-1/4 Cups All Purpose Flour
- ¼ Cup Granulated Sugar
- 1 Teaspoon Baking Soda
- ½ Teaspoon Salt
- 2 Large Eggs, Beaten
- 1 Teaspoon Vanilla Extract
- 1 Cup Milk
- 1 Cup Sour Cream
- Preheat griddle to 350 degrees.
- In a medium size bowl, whisk together the flour, sugar, baking soda and salt. Set aside.
- In a separate medium size mixing bowl beat the eggs.
- Add the vanilla extract, milk and sour cream to the eggs.
- Add the wet ingredients to the dry ingredients and mix until incorporated.
- Brush griddle lightly with butter.
- Pour pancake mixture onto hot griddle.
- Cook until bubbles form and begin to pop.
- Flip pancakes over and cook until golden brown, about 1 minute.
- Serve with melted butter and warm syrup.
