A BIRTHDAY DINNER PARTY
Hi There!
It is hard to believe that April is already coming to a close.
It was a BIG BIRTHDAY MONTH for many people in my life. My dad’s birthday is in April……
and my girlfriend Brenda’s birthday is in April……
and we celebrated my homie Cindy’s birthday in April too. So, Brad and I hosted a Birthday Dinner Party almost every weekend in April. First, I had a little birthday shindig for Cindy that I would like to share with you.
And, in the next few days, I’ll be posting the recipes for the dishes I prepared for Cindy’s birthday dinner. We started the evening in the bar, where I served a delicious and healthy appetizer: Lima Bean Dip with Garlic and Feta Cheese. Served with a crudite of garden vegetables, it was a perfect starter for a Spring dinner.
We then moved into the dining room……
and started things off with Creamy Asparagus Soup.
Next on the menu was a Ribbon Salad, prepared with ribbons of fresh carrots, zucchini and shaved parmesan cheese, tossed in a light vinaigrette dressing.
The main course was Phyllo Wrapped Wild Salmon & Fresh Spinach, served over a bed of sauteed fresh kale.
Cindy’s birthday cake was one of my favorites: Rum Cake.
So, to get things started, I will be sharing a tutorial on how to prepare my delicious recipe for Lima Bean Dip with Garlic and Feta Cheese.
