DECADENT LOBSTER MACARONI AND CHEESE RECIPE
As I mentioned in a recent “Sundays With Celia” post, we got together for our monthly Comfort Food Dinner last week. This time it was hosted by our dear friends, Ruth & Mark. A lovely table was set alfresco on their beautiful patio.
I really liked the colorful and festive flower arrangements.
Good wine was flowing along with great conversation, as we dined on our delicious and decadent comfort food. Our hostess, Ruth, made a recipe she has been perfecting for years and agreed to share it with me, so now I’m sharing it with you. It’s her very decadent Lobster Macaroni and Cheese recipe.
She served it with a simple arugula salad dressed in a light vinaigrette, a perfect combo. And, don’t you just love that we each got our own cast iron pan of Mac & Cheese to ourselves? So adorable! She got them here. I’m ordering some of my own right now! They allowed for portion control, as after all, this dish is so delish folks might go overboard. Plus, the pans keep the Mac & Cheese piping hot. Let me tell you though, at the end of the dinner there wasn’t a single bite left behind by anyone.
Ruth used Paccheri pasta noodles for our Mac & Cheese, which I thought was a great choice. You can get yours here. So now, let me give you Ruth’s Decadent Lobster Macaroni and Cheese Recipe…
- 1 Lb.Paccheri Pasta (Cooked according to package directions until al dente)
- 6 Strips Bacon, Cooked Until Crispy, Then Crumbled (Keep the drippings)
- 2 Tablespoons Minced Fresh Garlic
- 3 Tablespoons All Purpose Flour
- 3 Cups Whole Milk
- 1 Tablespoon Dijon Mustard
- Dash White Pepper
- 2½ Cups Grated Gouda Cheese
- 1 Cup Grated Smoked Gouda Cheese
- 2 Cups Grated Sharp Cheddar Cheese
- 3 Small Lobster Tails, Cooked & Cubed
- 1 Cup Panko Bread Crumbs
- ¼ Cup Freshly Grated Parmigiano Reggiano
- 2 Tablespoons Minced Fresh Parsley
- Preheat oven to 400 degrees F.
- Coat six, 6" cast iron skillets with nonstick spray.
- In a large skillet, saute the minced garlic in the bacon drippings over medium heat for 30 seconds.
- Whisk in the flour and cook while whisking for another minute.
- Slowly whisk in the milk, whisking until the mixture thickens and any lumps dissolve.
- Whisk in the crumbled bacon, dijon mustard and white pepper.
- Remove from heat and stir in the 3 cheeses.
- Stir in the cooked lobster.
- Stir in the cooked pasta.
- Fill each cast iron pan.
- Mix the Panko & Parmesan cheese together in a small bowl.
- Sprinkle evenly over each pan.
- Bake until bubbly, about 30 minutes.
- Remove from the oven, sprinkle with minced parsley and serve to your very happy guests.
- Start your diet tomorrow!
