Looking Back On Sunday
I started the week off here at After Orange County with a discussion about the latest and greatest new appliance that has cooks all over the country clamoring for this handy device known as the Instant Pot. I shared my yummy recipe for Creamy Instant Pot Rice Pudding. Don’t have an Instant Pot Yet? My friend made it in her Rice Cooker with good success.

The Top 25 Happiest Cities in the United States
As much as I believe I have found great happiness here in Lake Arrowhead, I find myself often considering if the grass is greener somewhere else. Do you do that? Are you always looking for paradise just in case it might exist somewhere else? In fact, I just returned from a trip to Asheville, North Carolina where we visited friends who were doing just that: trying to find the perfect place to live. So, for the past several years they’ve been testing the waters in Asheville. They have rented several different homes for extended periods of time to see how they like it. As it turns out they may very well move to Asheville permanently next year. In the meantime Brad and I still feel that there is no place like home right here in Lake Arrowhead.
Recently National Geographic Explorer searched for the happiest American Cities. Where they found them surprised me. Number one on the list is Boulder, Colorado where our youngest son lives. Brad and I wouldn’t live in this congested, pot infested town if you paid us! Sorry Boulder.
Our Asheville renting friends are considering moving to Asheville (not on the list) from Naples, Florida which is, ironically, #11 on the list! Go figure.
Well, I guess I’ll have to keep looking. Or maybe I just need to face the fact that paradise really is right here in my own backyard.
Are You Ready For Halloween?
Now that I’m an empty nester Halloween is a holiday that is pretty much in the rear view window. However, there is one tradition I think I’ll always observe and that’s my traditional Halloween Night Dinner. And, even though my kids have all moved out, my oldest son observes our family Halloween tradition with his 2 children in Washington, DC. It’s a warm and comforting meal to have just before going off to trick-or-treat. Our Halloween meal starts with my yummy recipe for Potato Cheese Soup.
I serve it with my delicious recipe for Sweet Cornbread.
And for dessert I make the first Pumpkin Pie of the season using my recipe for Pumpkin Pie In The Sky.
