SUNDAYS WITH CELIA VOL 58
Hello and welcome to Sundays With Celia Vol 58. I’m so glad you’re here! I want to wish all of you a very happy Father’s Day. I hope you are enjoying a wonderful day with all the important dads in your life. My dear-old-dad came up the mountain to spend the weekend with us.
We were hoping for good weather so we could enjoy a little lake time on our newly renovated dock. But as you can see in the following little video I just shot on my back terrace, some not-so-great weather is rolling in. JUNE GLOOM as they say.
Per a request from my husband we will be having my recipe for The Best Fried Chicken, served with Mashed Potatoes and Corn on the Cob.
For dessert I prepared a Cherry Pie, made from my very first crop of cherries!!
We’ve had this cherry tree for years and all it has produced is a few measly cherries. But for some reason this year it is loaded!
I’ve been harvesting cherries daily, trying to stay ahead of the hungry birds, bears and deer.
So today I painstakingly took the pits out of 2 quarts (8 cups) of freshly picked cherries.
To the cherries I mixed in 2 Cups of Granulated Sugar, 1/4 Cup + 1 Tablespoon of Cornstarch, and 1 teaspoon of Almond Extract. I added it to a Pillsbury, Pre -Made Pie Crust (found in the refrigerator case of your market).
I dotted the cherries with 4 Tablespoons of Butter, cut into small cubes, then covered it with another layer of pie crust.
After cutting some vent holes in the crust I sprinkled the pie with Turbinado Sugar and baked it for 1 hour at 375 degrees F.
What resulted was the VERY BEST CHERRIE PIE ANY OF US HAVE EVER EATEN!! I’m telling you it was to die for!! A bit time consuming to make (due to the cherry pitting task) but with a pre-made pie crust (Pillsbury is delicious) it is easy to make and simply divine!! And I’m telling you, it was the almond extract that made it!
Looking Back On Sunday
It’s been a busy week in the Becker household as we finished work on The House On Victoria Court. This week I shared with you the completed Master Bedroom. If you missed that post you can see it by clicking here.
I also had a frameless shower door installed to finish off the bathroom. Actually, I have yet to show you the remodeled bathroom so stay tuned for more of it coming next week.
And I sewed and installed some window shades for the Bunk Room.

What Else I’ve Been Up To This Week
As I mentioned last Sunday, we’ve added a cement walkway and steps in the front of our home. The cement got poured this week and I’m loving the result.
For some reason I got all excited when the cement truck arrived. It was kinda fun watching the cement being pumped as the big noisy cement mixer produced the cement.
Little by little the walkway was poured and formed.
It actually happened quite quickly, in a matter of 15 minutes or so.
And the result was a big improvement to the front of my home.
Partying At The Lake Arrowhead Country Club
We attended a really fun Country Western Hoedown at The Lake Arrowhead Country Club. It was a beautiful evening under the stars with a terrific country band, dancing, yummy food and fine friends.
