Hello and welcome to Sundays With Celia Vol 92. It’s very nice to have you here!
On this beautiful day in Lake Arrowhead my thoughts are on those less fortunate, who are suffering from the destruction of the recent hurricanes. What a terrible tragedy for so many who have lost so much!
We were rather on pins & needles watching the weather reports as Hurricane Dorian made its way to North Carolina where we own property on the Inner Banks at a beautiful place called River Dunes. But, the “Safe Harbor” that it was designed to be proved itself once again, and thankfully all is well in River Dunes.

Looking Back On Sunday
This week on the blog I told you all about The Zombie Who Came to Dinner. That’s right, I hosted a dinner party for a Zombie and invited you in to see the festivities. Click here if you missed it. Besides introducing you to my Zombie friend, I offered up menu and party planning tips, gave you some good recipes, talked about flower arranging, and shared lots of great resources too.

My Labor Day BBQ
Last week was Labor Day, which is always a good excuse to party, and a reason to eat good old American BBQ. For my Labor Day menu I prepared:
Caesar Salad

Cheesy Wedge Potatoes
One of my husband’s favorite things is his mom’s recipe for Cheesy Wedge Potatoes. His mom taught me how to make these easy, cheesy potatoes, so I thought I’d share the recipe with you too!
Here’s what you’ll need…
- 4 Fully-Baked, Medium Size Russet Potatoes – Skins On, Cut in half and then each half into 3rds
- Salt & Pepper to Taste
- 1/2 Cup Melted Butter
- 7oz. Can Mild Diced Ortega Green Chiles, Drained
- 2 Cups Sharp Cheddar Cheese, Grated
Here’s how to prepare them…
Place the wedges in a single layer in a large, oven-safe rectangular baking dish. Sprinkle generously with salt & pepper. Then pour the melted butter over the wedges.
Top the potatoes with the diced chilies.
Sprinkle on the cheese. At this point you could cover the dish with plastic wrap and keep it refrigerated for up to 2 days until you wish to bake and serve it. Another great make-ahead dish that’s perfect for entertaining!
Bake at 350° F until the cheese is melted and potatoes are heated through, about 15 minutes. Serve hot out of the oven.
Blueberry Lemon Layer Cake for Dessert
I follow a terrific food blog called The View From Great Island. I had noticed a yummy looking, summery-style cake on Sue’s blog for Blueberry Lemon Layer Cake that looked irresistible! We had a house guest staying with us that had a birthday coming up later in the week, so I decided to bake this Blueberry Lemon Layer Cake for our Labor Day Dessert, and to celebrate our friend Jim.
The recipe is full of lemony flavor, accomplished by the addition of fresh lemon juice and with lemon sugar, made by adding lemon rind to sugar and grinding it all up in a food processor.
The 3rd lemony addition was by way of something I’d never heard of before: Lemon Paste. The cake recipe says it’s not a required ingredient, but I went ahead and ordered some on Amazon here. I can’t wait to try it out in other recipes as well.
I live at high altitude, 6,000 feet, here in Lake Arrowhead, so cake baking can be a challenge. But this cake recipe didn’t fail me, like so many others that have a tendency to fall. Oh, and by the way, I love my little metal cake tester! It doesn’t make a gaping hole in cake like a toothpick does, and it works better for high altitude cake testing as well. I found beautiful, plump blueberries at Costco. This cake is bursting with them!
I decorated my Blueberry Lemon Layer Cake with more fresh blueberries and some fresh mint leaves from the garden. It was delicious! Get the recipe by visiting Sue at The View From Great Island. You’ll find her cake was much prettier than mine!
