A BIRTHDAY DINNER ON THE DOCK
Hi there!
Hope you have been enjoying a great 3-day Labor Day weekend! Ours has been fun and relaxing.
Friday night Brad and I hosted a birthday dinner on the dock for our buddy Jim.
The weather is unpredictable this time of year so I wasn’t certain if we’d be able to have dinner outdoors.
But, as it turned out, the temperature is unseasonably hot up here on our mountain, and was simply perfect for dining alfresco.
I was so pleased because I knew that this dinner on the dock would be one of our last this season. Winter will be here before you know it.
Cindy and Robert arrived by boat…
bringing along a beautiful and delicious Antipasto Platter.
Brenda arrived carrying a beautiful Chocolate & Quinoa Birthday Cake…
that she prepared for her husband, the Birthday Boy.
Life on our dock is very rustic, in fact, it’s just like camping. We have no electricity, so cooking is done on the BBQ.
We have no refrigeration, so food is kept in ice chests. Brad goes by boat to pick up ice at the marina and all the food is carried from home. This involves hiking down 119 stairs to get there. The good news is the hike is great for burning a few calories after dinner.
And, dining after dark is done by candle light.
Friday night I prepared Grilled Shrimp with Lime-Cilantro Butter. I served it with grilled limes, fresh asparagus and…
Barley with Kale Pesto. It was yummy! Stay tuned and I’ll be sharing the recipes later this week.
It was a beautiful lakeside evening with great friends, delicious food…
and a very unexpected and uninvited guest… the resident raccoon.
Even he knew where to get a good meal.
So there you have it: A Birthday Dinner on the Dock, with Rocky Racoon too!
What did you do for the Holiday weekend? Did you have any uninvited guests show up?
