BROWN SUGAR OATMEAL CAKE

Hi there,

When I was growing up my mom used to make a Brown Sugar Oatmeal Cake that we all loved. I long ago lost the original recipe, but I remember it was moist and delicious and almost fooled you into thinking it was healthy. Well, as cakes go, it probably wasn’t all that bad. For some reason, I got to thinking about that cake recently and decided I’d try to recreate it. I could almost taste it in my mind; funny how we can recall things like that.  So, after several attempts, I think I have a very good imitation of my mom’s cake, and as usual, I wanted to share the recipe with you.

This cake could be considered a Coffee Cake and served in the morning for breakfast or brunch.  It would also be delicious with afternoon tea, or it could be served for dessert.  As kids, we used to snack on it as an after school treat.  In any case, here is how you make it:

Start by preheating your oven to 350º F.  Then prepare a 9″ x 9″ baking pan.

Next, you’ll need to bring 1-1/2 Cups water to a boil and add to it 1 cup of old fashioned oatmeal. Allow the oats to soften in the hot water while you prepare the dry ingredients.

There are two things that bring redemption to this recipe and make it relatively healthy as cakes go. First the oatmeal, and second, the use of white whole wheat flour. These two items pack a punch in the healthy fiber department.

So, in a small mixing bowl combine:

1-1/3 Cup White Whole Wheat Flour

1 Teaspoon Cinnamon

1 Teaspoon Baking Soda

1/2 Teaspoon Salt

Using a whisk, mix to combine. Then set it aside to prepare the wet ingredients.

Add the following ingredients to your standing mixer:

1/2 Cup Butter, Cut Into Small Cubes

1 Cup Brown Sugar, Packed

1 Cup Granulated Sugar

Cream the butter and sugars together until they are light and fluffy.

Beat in 2 Eggs. 

NOTE: I like to crack the eggs into a small bowl first and beat them slightly with a fork before adding them into the batter.

Now pour in the softened oats along with all the liquid.

Beat on low speed to combine.

Returning to the dry ingredients that you set aside earlier, add them to the wet ingredients and on low speed, mix to combine.

Pour the batter into your prepared baking dish.

Place in preheated oven and bake for approximately 35 minutes until a toothpick inserted into the center of the cake comes out clean. Cool in the pan on a cooling rack.

Ingredients
  • 1-1/2 Cups Boiling Water
  • 1 cup Old Fashioned Oatmeal (not the quick cooking type)
  • 1-1/3 Cups White Whole Wheat Flour
  • 1 Teaspoon Cinnamon
  • 1 Teaspoon Baking Soda
  • ½ Teaspoon Salt
  • ½ Cup Butter, Cut Into Small Cubes
  • 1 Cup Brown Sugar, Packed
  • 1 Cup Granulated Sugar
  • 2 Eggs
Instructions
  1. Preheat oven to 350º F.
  2. Prepare a 9" x 9" baking pan.
  3. Pour the boiling water over the oats.
  4. Allow the oats to soften in the hot water while you prepare the dry ingredients.
  5. In a small mixing bowl combine the flour, cinnamon, baking soda and salt.
  6. To your standing mixer add the butter, brown sugar and granulated sugar.
  7. Beat until light and fluffy.
  8. Add eggs and beat to combine.
  9. Add the softened oats along with all the liquid and mix on low to combine.
  10. Returning to the dry ingredients that you set aside earlier, add them to the wet ingredients and on low speed, mix to combine.
  11. Pour the batter into prepared baking dish.
  12. Place in preheated oven and bake for approximately 35 minutes until a toothpick inserted into the center of the cake comes out clean.
  13. Cool in the pan on a cooling rack.
  14. Serve warm or at room temperature.
Notes
This moist and delicious cake is packed full of healthy fiber. It makes a great coffee cake or serve it as an afternoon snack with tea.
